For grapes intended for long-term storage, rapidly lowering the temperature in a pre-cooling room before stacking them in the main room is crucial and beneficial to prevent quality deterioration.
Because sugar content varies by variety at harvest, the higher the sugar content, the more likely it is that freezing temperatures will vary.
To maintain quality even after a rapid temperature drop, grapes should be stored in high-quality polyethylene bags specifically designed for grapes at a temperature of 10°C. This method of storage can be used for up to three months without issue, but with careful practice and experience, storage can be extended to five to six months.
