Bananas, one of the world’s most widely produced fruits, are harvested while still green. After a short storage period of 6-7 weeks, two crucial processes begin: color development (improving the banana peel’s color) and ripening (developing the fruit to its desired taste, color, and quality).
These processes require specialized spaces providing specific conditions tailored for them. Bananas are stored in these specialized spaces for 3 to 8 days at precise temperatures, humidity levels, and ethylene concentrations before being released to the market. They are also exposed to specialized ventilation systems. All these processes must be executed with a highly precise approach and in appropriate spaces to meet market expectations.
